LAYERED BAKED VEGETABLES
Zucchini 1 no
Eggplant 1 no
Red onion 50g
Sunkiss Blossom & Spice Blend
Sea salt 1 pinch
Black pepper crushed 1 pinch
Method
Slice the red onion.
In a pan, sauteed the red onion in olive oil for 3 mins, season with sea saly and pepper.
Put it aside.
Slice the zucchini and eggplant.
Brush with olive oil, season with Sunkiss Blossom & Spice Blend, sea salt evenly.
Ina tray, first put zucchini then layer with onion, then layer with eggplant and onion again.
Bake in oven at 220c for 15 mins
